Can anyone point me to or post a list of what enemy types are what - like what falls into say Monstrous Humaniod or Evil Chaotic Outsider? On a lot of those I'm just guessing unless its obvious like Kobolds & Trog are reptiles etc.

From the "Type" list:
Aberration - are naturally occurring creatures, but their anatomy would be considered "alien" in real life (beholders, mind flayers)
Animal - a real-life animal (hamster, bear, chicken, dog, hippopotamus, platypus)
Construct - an artificially created creature comprised singularly of one material (stone, wood, pumice) that is animated by binding an elemental spirit into it (this is why a flesh golem is a construct and not an undead because a flesh golem has not been animated by negative-energy)
Dragon - encompasses, uhm, dragons?
Elemental - a physical manifestation of any of the energies of the planes
Fey - Usually size Tiny or smaller classic fantasy creatures (pixies and fairies)
Giant - a humanoid of size "Large" or larger (ogres, trolls)
Humanoid - any creature that has a roughly human anatomy (arms, legs, head) that does not have features that seem "out-of-place" (see "Monstrous Humanoid") (humans, elves, orcs)
Magical Beast - an animal with magical attributes or a creature that can be considered a "natural" animal in a fantasy setting, but does not appear in real life (gray render, blink dog, unicorn)
Monstrous Humanoid - a humanoid with non-humanoid features and, optionally, behaviour (minotaurs, the wild-men of DDO, gargoyles)
Ooze - an amorphous creature of simple composition with no real discernible anatomical structure (black pudding, gray ooze, animated jelly from a jelly donut)
Outsider - a creature not on its home plane (flesh render, devils, angels, or even humanoid adventurers from the material plane if they're on an extraplanar adventure)
Plant - usually a non-intelligent creature whose composition is made up solely of plant matter, but is not actually a simple plant (treants, shambling mounds)
Undead - a previously living creature that has been reanimated by negative-energy (or even positive-energy, I think {Undying Council?}) excluding oozes, plants, elementals, constructs, and, possibly, outsiders.
Vermin - a creature that would be considered "verminous" in real life (beetles, rats, mice, cockroaches, flies)
The bulleted list is how I've categorized them and how I explain it. The d20 SRD would have better descriptions if they have them.

Edit: Oh, as far as how an "Outsider" is categorized, their alignment is usually considered a sub-type. So a pit fiend is a Lawful Outsider as well as an Evil Outsider because it is lawful evil. Whereas a succubus is a Chaotic Outsider as well as an Evil Outsider because it is chaotic evil.
Edit: Added "of simple composition" to oozes to help differentiate them from creatures like the Gibbering Mouther, which might seem like an ooze because it has no real anatomy, but is, in-fact, an aberration.
Edit: Clarified that constructs are not animated by negative-energy.
